Panicale Day Twelve
Today was our last full day in Italy which I am so sad about! We had our last breakfast and cappuccinos at the villa :(. After breakfast, we headed to Colle San Paolo to visit Fattoria Fontemanna where we learned about cheese production and had a cheese tasting as well. I enjoyed learning about the production of their cheese, ricotta, and yogurt. I thought it was interesting that they mainly use female sheep, this reminded me of how on the truffle farm they only used female dogs for hunting. I’m always here for a feminist moment! After seeing the sheep on the farm, which were so cute and one of my favorite parts, we got a tour of where they make and sell their products. We were also shown the room where they store their pecorino cheese, which smelled honestly awful and made me question if I ever want to eat cheese again. I love cheese and yogurt but the process does throw me off a bit, I think it’s the mold that throws me off. After our tour, we had a tasting of the pecorino...
